Pasta Florentine


I love pasta. Both to cook and eat. And I love the cream based sauce to go with it. There is so much you can experiment with pasta. As I am writing this, a whole lot of ideas are popping in my head. Hmmmmm. Lots of recipes to try out this weekend. Anyway, here is how I made pasta florentine. Not a spinach fan? You'll become one when you eat this.....:)
Heat about 8 cups of water. When the water has boiled add 2 cups pasta with a little salt and oil. Cook it for about 7- 8 mins. You can use any pasta you like, I used fussili. You have to cook it till it al dente, .i.e, till it is firm but not hard. Drain and  pour cold water over the pasta. This is to stop the cooking process. Keep in the strainer till the water is all gone. Pour a tbsp of olive oil to prevent the pasta from sticking. Keep aside.

To make the sauce, melt about 4 tbsp butter. Add about 2 cups of shredded spinach.(palak). Use only the leaves and not the stalks. Cook for about 5 to 7 mins on low heat. Make sure the heat is low and add about a cup of cream and about 4 tbsp of grated cheese. Again you can choose the kind of cheese you want to choose. I used the Go cheese cubes for this recipe. Add pepper, oregano and check salt.  When you want to serve it, you can warm up the sauce and add the pasta. Make sure the pasta is well coated with the sauce and a sprinkle of cheese on top will give it the perfect look.
