Noodle Salad.



Baking it has been for most of this month. .  So here is something different.... A noodle salad. It was hardly an effort to make this dish , but it was quite tasty and can make a perfect accompaniment for some steak or bake.
It’s just this much. Boil the noodles in hot water till its done. Refresh in cold water and keep aside. I used egg noodles. A tip would be to add a tsp of oil and little salt in the water to cook the noodles. This helps in not letting the noodles stick to each other. Chop some vegetables. I used yellow  and green bell peppers, some sweet corn, cabbage. You can add almost anything you like. Toss the vegetables in some olive oil and stir fry for a minute or two. Season with salt, pepper, basil, oregano. Mix with the noodles and add about 2 tbsps of mayonnaise. And there you go. Feel good about eating a yummy salad.
