Date and Walnut Cake


You thought I was done with blogging when you didn’t see any posts for 2 weeks. . Didn’t you?  . . . . I’m nowhere close to done . 
So this one was a great success. The date and walnut cake, adapted from Nita Mehta’s recipe. I think this one’s fail proof and was hardly any effort. I loved the cake. It was absolutely delicious.
You will need
2eggs
150 g ms dates. (the original recipe specifies 250 gms)
½ cup oil
85 gm maida
100 gm sugar
½ cup walnuts , chopped finely
½ tsp vanilla essence
¼ tsp baking powder
½ tsp soda bicarb
This is how you do it.
Deseed dates, chop finely. Soak in 5 tbsp hot water with ½ tsp soda bicarb for about ½ an hour. If possible keep it soaking for longer.
Sift maida with the baking powder, add chopped walnuts and dates. Keep aside. Beat eggs in a separate bowl.
Beat oil and sugar, add essence and mix.  To this mixture, add half the maida mix and half  the beaten egg. Mix well and add the remaining egg and maida mix. Bake in a preheated oven at 150 C for 45 mins. Cool cake and remove from tin.

You cannot go wrong with this one. .
