Lava Cakes

If I'm gonna post once in 3 months I better put up a good post. I've actually been trying of loads of new stuff, cakes,  bakes, curries, jams, everything!!! Maybe that's the reason why I haven't made the time to write a post... Oops. Not fair I know. . Hmmm. Time to make up and there's nothing a molten lava cake recipe can't fix. As all recipes on this blog, this recipe is tried and tested several times and super easy to make. Remember simple is good.
 Now, I've tried this recipe enough times to tell you that you can't overcook this one, coz that just takes away the lava part of the cake and what you'll get is a soft chocolaty cake. So follow instructions on the bake timing for the cake. A little patience and effort can get you perfect lava cakes. This recipe makes 4. I got this recipe from Brown eyed baker . I love love super love this blog. What's not to love about it.


So here we go:

Ingredients: 113 gms butter or 8 tbsps. which is 1 stick of butter plus extra for dusting
2 tsp flour plus extra for moulds
100 gms chocolate( I used dark chocolate)
2 eggs
2 egg yolks
 1/4 cup granulated sugar




First preheat the oven to 225 C.
Take 4 moulds, and butter them generously and then dust them with flour. This step is very important. Make sure the moulds are buttered and dusted well, so the cakes come out easily. Tap out the extra flour.

Next, put the butter and chocolate in a bowl and place it over a vessel (double boil) of hot water( not boiling) till the chocolate is completely melted. Set aside and let it cool a bit and whisk it a bit.

Separately, beat the eggs, egg yolks, and sugar with a whisk till it turns pale. Pout this mixture into the  chocolate mixture and then quickly beat in the flour. ( 2 tsps.)

Divide the batter equally in the moulds and let them bake for 7-8 mins. Yes 7-8 mins. That's the time it should take for the sides to set and when that's done, take the cakes out of the oven. Take a deep breath of confidence and run a flat knife  around the sides of the cakes and invert it on to a plate. Phew. Serve immediately. And yes icing sugar, or a scoop of vanilla ice cream to go along is perfect.

Cut into it and that lava chocolate should flow out gently giving you a great sense of accomplishment. It sure did it for me.
