Double Chocolate Giant Cookie






If you've followed my blog long enough, you probably know I don't have much luck with baking cookies. Run through the recipes posted so far, and you'll see few cookie recipes, but of course all easy and failproof, and now this one will top that list. The oatmeal peanut butter cookies and fruit biscuits are a couple of my favourites.


I fell in love with the sound of a Giant double chocolate cookie the minute I heard about it. What's not to love about it? Super simple, super easy and of course super quick. And I can vouch for all of this because I made the recipe twice on the same day. It was THAT simple. A mom of two couldn't ask for more.

There are so many things I like about this recipe, I don't know what to start with. Maybe the obvious then, it's chocolate. Even better, double chocolate. Then it's the whole toss and mix in one bowl kind of recipe. These one bowl recipes are my favourite kind. I also love the fact that it is easy to bake, with no fuss, all it needs is a sheet of baking paper and spoon and you have one perfectly shaped giant cookie. To top all of that, you can add a bunch of sprinkles for some extra glam and there you have it, a very pretty looking giant cookie. Do you see why you need to try this recipe today and now?

You could use choco chips in the cookie dough, but I went ahead with chopping a bar of chocolate to mix with it. This leaves you with slightly larger chunks of chocolate to bite into. You're welcome!!!!
Also, this cookie looks just as pretty unbaked as it does post-baking. Just saying.


You might be tempted to dig into this, much before you put it in the oven. So indulge in a little bit of patience there.

Here it is


Double Chocolate Giant Cookie


Ingredients:

2 tbsp unsalted butter, softened
2tbsp castor sugar
2 tbsp brown sugar
2 tbsp beaten egg
1 tsp vanilla extract
2 tbsp cocoa powder
1/4 cup flour
1/2 tsp baking soda
100 gms chocolate, roughly chopped
a handful of sprinkles (optional)

Method:

1. Preheat the oven to a 175C. Line a baking tray with baking paper.
2. In a bowl, toss the butter and sugars together. Using a cake beater or a fork, mix for a couple of minutes.
3. Add in the vanilla and egg, continuing to mix well as you go.
4. Turn off the beater if you're using one and toss in all the dry ingredients; cocoa powder, flour, baking soda and all but 1 tbsp of the chopped chocolate.
5. Mix the wet and dry ingredients well, and you'll be left with a slightly sticky dough.
6. Using a spatula, gather the dough and place in the centre of the baking sheet. Use the spatula or a spoon to shape the dough into a rough ball, slightly flattened, like you see in the picture above. Leave enough space on the sheet for the dough to spread as it bakes.
7. Sprinkle the reserved 1 tbsp of chopped chocolate on the dough and toss the sprinkles on top.
8. Bake the cookie for 15 mins.
9. At the end of 15 mins, the cookie will feel a bit soft, but it will firm up as it cools.


And there you have it all ready. You could slice it into quarters or take a giant bite. The choice and the cookie is all yours.
