I was always under the impression that making a short crust pastry was difficult until I tried making one. Truth is, its very simple. This apple pie was my first attempt and it turned out yum. And did I mention, it tastes great with a scoop of vanilla ice cream.????
You will have to start with making the pastry. It's just like making chappati dough with different ingredients of course. Cut 185 gms butter into cubes. Combine with 2 1/2 cups flour and 1/4 cup icing sugar. Mix untill it resembles coarse breadcrumbs. Add about 1/3 cup cold water to mix it and make a firm dough. The reason you use cold water is so that the butter doesn't melt , in which case it will be difficult to knead.
On a lightly floured surface roll out the dough enough to line the base of a round tin. You are not going to need all the dough for this.A little is needed to to cover the pie. Cover the base and sides of your tin with the rolled out dough. Use a loose bottom tin if you have one. Keep aside. Preheat your oven at 175 C.
Peel and slice 6 apples. Place them in a saucepan of water and simmer till tender. Drain and let it cool. Then place them over the rolled out dough in the tin. Also add 1/4 cup raisins, and sprinkle about 3 to 4 tbsps of icing sugar. Roll out the reaming dough to cover the pie. Press the edges together. With a knife, you can draw lines or make a few cuts on the top sheet of pastry as I have done Place in the preheated oven and bake for about 45 mins. When done, let it stand for 30 mins , before you serve it. Sprinkle top with icing sugar and serve with a bowl of ice cream.
