I must let you know that I can’t always tell you the exact measurements of the ingredients, simply because I don’t know. All these dishes are a result of experimenting. So you can do the same. Just use these recipes as a base for you to get started. The thrill of cooking comes from experimenting with the ingredients, varying their quantities according to your taste and adding new ones that no one thought of.
Olive oil. 1 tbsp
1 cup pasta
Butter 5 tbsp
Maida 2 tbsp
Milk 1 ½ cup
White wine 1 tbsp (optional)
Cream 4 tbsp
Boiled potato ½ cup. Cut into small pieces
Cheese ½ cup grated.
Oregano, , Salt ,Basil, Pepper to taste .
Heat about 5 cups of water. When the water has boiled add the pasta with a little salt and oil. Cook it for about 7- 8 mins. You can use any pasta you like, I used penne. Drain and pour cold water over the pasta. This is to stop the cooking process. Keep in the strainer till the water is all gone. Pour a tbsp of olive oil to prevent the pasta from sticking. Clean and cut fish into small bits. Heat 1 tbsp butter in a pan. Add fish and stir fry for about 3 to 5 mins. Add a pinch of oregano, a pinch of basil and pepper. Remove from pan and keep aside.
To prepare the sauce, heat 4tbsp of butter. Then add the maida and mix. Do not let it brown. Add the milk, stir continuously and let it thicken. Add salt, pepper, oregano. You can also add a tbsp of white wine. Add the fresh cream. Toss in the cooked fish, pasta and potato. Check salt and seasonings. Pour into a baking dish. The sauce should cover all the pasta and fish.Top with grated cheese. Preheat oven to 180 degrees and bake dish for 20 mins. Serve hot with dots of butter on top.
