Chocolate and Cream Pudding.......

Like the way it looks?.............. Looks yummy?......... Do you wanna feast on it right away?............. My friends did when I made it for them.......... And it's funny how I ended up making this gorgeous dessert. . Ever made a cake that refused to come out of the tin.? or that just didn't turn out right?and you didn't know what to do with it? Hmmm. . that was the problem here and so I got a little creative and then this glorious dessert was born and it so easy to make.....
So I started with making the chocolate cake. The cake was yummy, very chocolaty, the only issues I had with it is that it was a little crumbly and it didn't come out of the pan in one piece. But that's okay, its exactly what I needed. So for the chocolate cake:
2 cups powdered sugar

1 ¾ cups flour
¾ cup cocoa
1 ½ tsp baking powder
1 ½ baking soda
1 tsp salt

2 eggs
½ cup oil
1 cup milk
1 ½ tsp vanilla essence
1 cup boiling water

Preheat oven to 180 C . Grease a tray and keep aside.  Sieve the flour with cocoa,  baking powder and baking soda. Mix with the sugar and salt. Add two well beaten eggs, and then the milk, oil , and essence. Mix well or beat for 2 mins. Stir in the boiling water , mix well , pour into greased dish and bake for 40 mins. 

Now here's the nice part, when the cake is done, you can eat it as it is, or you go one step ahead and make this delicious dessert. Read through. 
You will need :
200 gms fresh cream
2 tbsp icing sugar
Chopped cherries
Brandy or strawberry tang.

Take about 200 gms fresh cream, mix in 2 tbsp icing sugar, put it in a steel vessel and keep it in the fridge for 15 mins. If you are using sugar you have powdered at home, sieve it before mixing it with the cream. You need to put the cream in the fridge is because cream needs to be chilled when you are beating it. So fifteen mins later, beat the cream till it form soft peaks. I used an electric beater. It was almost effortless to beat the cream .Put the cream back in the fridge.

Take out the cake when it has cooled down. Spread the cake, even if it is crumbly in a loose bottom tin. Soak it with litlle brandy mixed with water. You can also use strawberry tang if you like. Press it together so it forms an even layer at the bottom of the tin. Press in chopped cherries. Take half the cream and spread over the cake layer. Then put the rest of the cake over the cream and soak it with the  brandy mixture. Put the rest of the cream in a piping bag and decorate as you like. Serve chilled.  When you wanna serve it, push it out of the loose bottom tin and slice through.That's all. And wait till you get everyone's compliments ............ It's a real thrill.........
