Typically it would be a fish and pasta bake, and that’s what we have already tried, but hey who says you can’t put noodles.. . Tried this out and it was quite a winner. . and as always easy to make. .
Started with making the noodles. Just boil some water, add a pinch of salt and a tsp of oil. When the water is boiling add the noodles and cook till done. Refresh in cold water, drain and keep aside. Add a tsp of oil ,and mix the noodles, so that it doesn’t stick. I used egg noodles.
Use about a cup of fish, cleaned and cut into small pieces. I used seer fish. Heat a pan with little oil, toss in the fish and stir fry for a minute. Add some chopped yellow and green capsicum, some spring onions. Add a pinch of salt, oregano, basil and I used chives too. Experiment with flavours, you can add any herbs you like. . rosemary, thyme, mixed herbs. Keep aside.
All you got to do now is make the white sauce. . . for which you will need.. .
Butter 5 tbsp
Maida 2 tbsp
Milk 1 ½ cup
White wine 1 tbsp (optional)
Cream 4 tbsp
To prepare the sauce, heat 4tbsp of butter. Then add the maida and mix. Do not let it brown. Add the milk, stir continuously and let it thicken. Add salt, pepper, oregano. You can also add a tbsp of white wine. Add the fresh cream. Check salt and seasonings. I skipped the cheese this time and it turned out just as great. . Mix the fish and noodles with the sauce and pour into a baking dish. You can top it with a layer of mashed potato if you like.. Preheat oven to 180 degrees and bake dish for 20 mins. Serve hot with dots of butter on top.
