Banana Bread




So how does banana n bread sound together........ Yum.......How does banana, bread and baked sound?........ Yummmmmmmmm......... That is exactly what this baked banana bread turned out to be. Call it what you want, banana bread, banana loaf, banana cake..........it was quite heavenly....... and you don’t have to guess that it was easy to make........ Remember, I like to keep it simple.............
Found this recipe in Bangalore Mirror a couple of months ago and have been wanting to try it out ever since. I’m glad I did and I wonder why it took me so long to .......
Here is what you will need
½ cup unsalted butter
1 cup powdered sugar
3 eggs
3 bananas mashed.over ripe ones are perfect.
2 cups flour
1 tsp baking soda
1 tsp baking powder
1 tsp vanilla essence
a pinch of salt
Walnuts 4 tbsp roughly chopped
Start with preheating you oven to 175 C and greasing a baking tray.  I used a loaf tin, but even a square or round tin will do just fine. Sieve the flour with the salt, baking powder and baking soda. Keep aside. Cream the butter and sugar till light and fluffy. Stir in the eggs one a time, making sure you beat well after each addition. Stir in the mashed bananas and vanilla essence. I don’t know if it was supposed to and why it did, but for some reason my mixture looked all curdled up at this stage. . If yours does too, don’t worry, it kind of corrects itself later on and the loaf will turn out fine. Fold in the flour  and lastly the walnuts. Pour into greased baking tray. The recipe mentioned to bake it for 60 mins but my cake was ready in about 45 mins. You’ll know the cake is done, when you insert a toothpick into the cake and it comes out clean.


Let it stand for about 15 mins in the tray before you tap it out. Indulge and if you are saving some for later, make sure you warm it up in the microwave oven for about 30 seconds jus before taking a bite..........
