Do you know the Muffin Man ?


People it’s Donna Hayes again. . I think she is becoming one of my favourites. Loved her show, fast, fresh and simple. Truly it was..........Now this recipe was for blueberry muffins, but I made them with strawberries.
So , what could be more perfect for evening tea than some pretty , gorgeous muffins ??????? This was such an easy recipe and the best part of it, is that once you know to make the base, you can mix and match flavours and fillings and who knows, you could end up earning a reputation for making the most delicious muffins......... Now , don’t expect these to be sweet, coz muffins are not supposed to be. But they are gonna be Yum.. Make sure you have them warm though. They taste better that way.
So you are first gonna need :
2 ½ cups flour
1 cup castor sugar
1 tsp baking powder. .
Combine the above ingredients and sift them. Transfer to a large bowl, and make a well in the centre. To this add
½ cup oil
½ cup milk
1 egg
1 tsp vanilla essence

Mix together. Its gonna be a rather thick batter so don’t freak out . .  Then add 300 gms of the fruit of your choice . I used strawberries. You could use banana, mango, coconut. Mix well and put in cup cake cases. Sprinkle a little granulated sugar on top and bake them in a preheated oven, 180 C for 30 to 35 mins. When done, enjoy them when they are still warm and feel the happiness of having made them all on you own with such little effort......................
