Date and Walnut Cake

You thought I was done with blogging when you didn’t see any posts for 2 weeks. . Didn’t you? . . . . I’m nowhere close to done . So this one was a great success. The date and walnut cake, adapted from Nita Mehta’s recipe. I think this one’s fail proof and was hardly any effort. I loved the cake. It was absolutely delicious. You will need 2eggs 150 g ms dates. (the original recipe specifies 250 gms) ½ cup oil 85 gm maida 100 gm sugar ½ cup walnuts , chopped finely ½ tsp vanilla essence ¼ tsp baking powder ½ tsp soda bicarb This is how you do it. Deseed dates, chop finely. Soak in 5 tbsp hot water with ½ tsp soda bicarb for about ½ an hour. If possible keep it soaking for longer. Sift maida with the baking powder, add chopped walnuts and dates. Keep aside. Beat eggs in a separate bowl. Beat oil and sugar, add essence and mix. To this mixture, add half the maida mix and half the beaten egg. Mix well and add the remaining egg and maida mix. Bake in

Banana Butterscotch Pudding

This recipe for banana butterscotch pudding seemed too easy to be true. Honestly, I found the method a bit weird too. Read on and you'll know why. With all the uneasiness around the recipe, I still went ahead to try it out, without thinking twice, in fact, I baked it twice, two batches for a lunch we were going to. The only reason I wasn't jittery about it, is because it's a Rachel Allen recipe and I love Rachel Allen. Scroll through the baking section and you'll find quite a few Rachel Allen recipes. Date bars and Peanut blondies are couple of my favourites. This batter takes just 10 mins and a whisk to make. Sometimes that's the best part of a recipe, that it doesn't need an electric beater, which means less cleaning and who doesn't love that. This is a kind of odd recipe. Caramel Custard

Caramel Custard , or flan, or caramel pudding, or creme caramel, oh, call it what you will, it doesn't matter. Truth is, it's a classic!!! and my all time favourite dessert and as luck would have it the foodie on duty (aka hubby darling) lovessssss it too. There can never be enough of it and to think that this heavenly dessert needs just 4 ingredients!!!! Unbelievable. Remember this? My first introduction to caramel custard was when I was a little kid. We often made it using the Weikfield pack. I still remember what that packet looked like. The instructions were easy to follow and it didn't take too long for that dessert to set and thinking of it, if given a chance I could've eaten the entire bowl on my own,,, sigh, if not for those two siblings.......
