The thought of making mayonnaise at home can be quite daunting. Beating up the eggs, mixing in the oil and taking care to make sure they combine can be quite a risk. That's what I thought, even without trying to make it. But hey, the amatuer's got to be up for some adventure. And it's been so much of baking lately , I wanted to do something different . Trust me, all you need is a little bit of patience and of yes an electric beater. I used my cake beater and got amazing results. I've followed this recipe 3 times now and have always been succesful. The mayo tastes yum and you'll never need to pick it up from the store again.
To begin with, there are only so many things you will need.
Egg Yolks 2
Sugar 1 tsp
Mustard Powder 1 tsp
White pepper powder 1 tsp
Salt to taste.
Vinegar 2 tbsp
Oil 3/4 cup.
In a large mixing bowl, mix the egg yolks, sugar, salt, mustard powder, pepper powder. The quantites mentioned above need not be followed accurately. When the final product is done, you can taste and add more of what you like. Beat it for about 1 minute. This is the easiest part. Don't worry nothing difficult to follow, just a little bit of patience and time. Now put your beater speed on high. Keep beating and add oil, little by little into the egg yolk mixture. This needs to be done as slowly as you can to make sure the yolks and oil combine. (I used olive oil). The recipe says the oil needs to be added drop by drop, but geez I'm not that patient , so I added the oil in a slow stream , tsp by tsp. That was much faster and it worked. To make sure the oil combines as you add it to the mixture, put the oil right where you are beating the mixture. So one hand you got the beater running and the other you are adding the oil tsp by tsp. Do so till all the oil is used up. This is what it should look like.
Now add the vinegar a little by little. The colour will lighten and turn whitish from yellow. Taste the mayo and check if you wanna add any seasonings. And that's it , you have homemade mayonnaise, all ready to go into a jar. It'll stay good in your fridge for over a month. (that's if it lasts :) )
