Ok, so it isn't the most spectacular or heavenly dish. .Come on, in 3 steps?, , But it is fast, easy and my best option for a quick weekday meal . And since it turned out quite nice the first time around, I made it for a pot luck meal, I had very little notice time for and guess what, everyone really liked it. . So good enough a dish to be up on my blog. Don't you think.
Here are the three steps then
1. . Get all the cleaning and chopping done :Chicken, one onion, two stalks of lemon grass, one capsicum.
2. Cooking: Heat two tsps of oil, and fry the sliced onion. Let it brown and at this point add pepper powder,a nice large doze( I used freshly ground pepper. Think it makes a big difference) one maggie cube (optional), lemon grass stalks, some grated lemon juice and zest for some extra zing. If you don't have lemon grass, don't fret, just squeeze some extra lemon juice. Turn the flame to high and add the chciken. It's important to fry it on high flame and let the chicken brown. This makes sure the juices of the chicken are sealed and keeps the chicken moist. When the chicken has browned, turn the flame to low, and cook till chicken is done. If the chicken sticks to the pan, add very lil water. Cover the pan till chicken is done.
3. Garnish : When the chicken has cooked, add the capsicum and salt if needed , as the maggie cube contains salt and then say TADA........ CHICKEN's Ready.......
I wasn't kidding about the three steps now. . Was I?
Serve with some hot rotis, or just gobble it up plain.
