So this dish
is something I like do for a weekday dinner, simple, no fuss and yum!!!!!!!
No need for curry, or rice, or a side dish.. It’s a complete meal by itself.. Ever had trouble getting someone to eat veggies........? Give this dish a try. . they’ll hopefully gulp it down happily. . . Maybe this is three steps too after all. . Let’s see.
.
1.
Clean,
Chop and boil. . Clean n chop all your veggies; I used cauliflower, cabbage, sweet
corn, baby corn, spinach. . Use however few or as many. You can add potato,
peas, mushrooms... . . . More the better holds good. . Put to boil the cauliflower and in a separate
vessel some pasta, with some water and salt. . If you want to skip the pasta, you can. When the cauliflower’s done, reserve the
water, to add to the sauce. It add great
flavour. If you are new to pasta or need some help with cooking pasta check this post.
2.
Stir
fry and sauce. Just to give all the vegetables a little extra flavour, I stir
fried them in a blob of butter. . So into the pan of melted butter went the
corn, spinach, cabbage. . Remove from the pan and put into your baking
dish. In the same pan, I made the white
sauce. A much simpler version. Heat some butter, add the milk, the water in
which the cauliflower was boiled, some salt , some pepper, some dried oregano,
mixed herbs, anything will do. . Mix some flour in water and add to the sauce. Bring
it to the boil and let the sauce thicken. Check salt and seasonings.
3.
Assemble
and bake: Mix the drained pasta and veggies in the baking dish and then pour
the white sauce over it. You can put some grated cheese over it if you like. Bake
it in the oven for about 25 mins. You can
eat it plain or with some toasted bread. . .
That’s
all. . Simple and yum.
Enjoy.............
