Spinach Frittata

Breakfast is a meal I don't really explore much with. I just run out of ideas when it comes to making things for breakfast. It's funny, but I got a list of things I can make for breakfast, on my fridge. So every morning I just run my fingers through the list and pick one item for the day. Geez, it was getting a little boring, so I had to try something new and so I did. Spinach Frittata. Don't you just love the sound of it. Sounds healthy, fun and yum. I loved the idea and jumped straight into making it. So it might be just a fancy name for an omlet, but hey, its got spinach, its baked and it gorgeous to look at. So trust me and go ahead with it. I don't think its too much effort to make one. I stick with my rules; got to keep it simple. So I didn't really follow a recipe but made it my way. . Here it is , my version of a spinach frittata.

So ingredients time:

1 bunch of spinach leaves, cleaned and chopped
1tbsp olive oil
1 oninon finely chopped( this required most effort :) )
1 large clove of garlic , minced
4 eggs
2tbsp milk
3 tbsp grated cheese ( go as you like. more, less? you decide)
salt and pepper to taste


Method

Preheat the oven to 200 C.  Blanch the spinach in boiling water till just wilted. Strain and keep aside.
In a mixing bowl, whisk the eggs, milk and  2 tbsp of the cheese. Season with salt and pepper. 
 Heat a pan, toss in the oil and the onion. Stir fry till they become soft. Make sure your pan is oven proof and non stick. This is the same pan you will be putting in the oven. You don't want to cry over your favourite pan that melted in the oven .So double check its oven proof.
 Once the onions are soft, add the garlic, cook for a minute and then add the spinach. You can add a bit of butter if you like. . I did. Spread it out evenly in the pan and gently pour the egg mixture over it. With a spatula , help the egg mixture flow below the spinach. Sprinkle the remaing cheese on top.

When the mixture is half set, toss the pan into the oven. Let it bake for about 15 mins till the frittata looks nice and golden on top.
That golden colour on top just looks heavenly and makes you wanna dig in right away.

 Now don't worry if you don't have an oven, or simply don't want to use one. You can cook the frittata, over the burner till its done, without putting it in the oven. .
There you have it, healthy happy breakfast. . . Enjoy.
